乾蔥與洋蔥等蔥屬類蔬菜一樣，含有硫醚類、有機硫化物、硫化丙烯、醛類、酚類、醇類等活性物質，經實驗證實，具有抑制癌細胞生長、預防老化..等等功效。蔬菜中唯一含有前列腺素的就是乾蔥，前列腺素的功效是能擴張血管，降低血液濃稠程度，加上豐富的槲皮素(同時有舒緩過敏的功效)，所以讓乾蔥有降血糖、降血脂、增加血管彈性、抑制血小板凝結、預防動脈硬化或血栓的功效。
